Hello dear, Sharing with you this unique fluffy and yummy strawberry cake gives me so much joy. The color of the cake, it’s unique taste makes me want to choose it above all other cakes. You can’t know the taste unless you try it! That said, let’s look at this easy step by step recipe to bake this yum-delight.
If you haven’t seen our Vanilla Cake Recipe and Orange Cake Recipe then we encourage you do that first before going through this.
Ingredients
- 1 pound of fresh strawberries (i.e. 3,3/4 cup of whole strawberries)
- 250 gram of cake flour (i.e. 2,1/2 cup)
- 170 gram unsalted butter
- 350 gram granulated sugar (i.e. 1,1/3 cup)
- 5 large eggs
- 2 teaspoon of baking powder
- 1/2 teaspoon of baking soda
- 1 teaspoon of salt
- 75 gram of plain yogurt (i.e. 1/3 cup)
- 2 teaspoon of vanilla extract
- 1/2 cup of whole milk.
For the benefit of those who cannot get access to cake flour… you can do the following to prepare your own cake flour.
- For every 1 cup of all purpose flour, remove 2 Tablespoons.
- Then add 2 Tablespoons of cornstarch and mix it with the all purpose flour (know that the mixture of the all purpose flour and cornstarch is equivalent to 1 cup of cake flour).
How to prepare Strawberry Puree
You start preparing you strawberry puree by washing and removing the leaf on top of each, then using a food processor or a blender, blend the strawberries to get 1 cup of puree.
Pour the blended strawberries into a saucepan and boil on a low-medium heat for about 30mins to “reduce the puree” (i.e.boiling to reduce its water content). till the puree become thick and very red in color.
Procedures for baking Strawberry Cakes
Now that we know the ingredients to prepare strawberry cakes, lets look at the step by step guide for you to bake your

Step 1
Prepare your cake pan(9″ or 8″ pan) by light greasing your pan with butter and sprinkling some flour on it, then set aside. Then preheat your oven to about 350°F
Step 2
In a mixing bowl,whisk cake flour,salt, baking soda and baking powder together and set aside.
Step 3
With the use of an electric mixer, beat butter and sugar till it pale, creamy and fluffy.
Step 4
Into step 3, beat in the egg white in a high speed till it is well combined.
Step 5
Into step 4,add in your vanilla extract and plain yogurt and mix till it is well combined.
Step 6
With the mixer on a low speed,gradually pour in your dry ingredients(step 2).please don’t over mix.
Step 7
Into step 6, pour in your milk and mix till well combines on a low speed. Remember do not over mix.
Step 8
Lastly add in your reduced strawberry puree and fold it in with a spatula till well combined.
Step 9
Pour cake batter evenly into the two prepared pan and bake till a skewer is dug in the center and it comes out clean.
