Nigerian Jollof rice is probably the first dish anyone who gets acquainted with Nigerian cuisine learns about. This tasty cuisine is accepted all over the world and the ingredient used is found in all parts of the world. Several countries can’t agree on who came out with the Jollof Rice recipe, but the Nigerian Jollof recipe is certainly the most popular one.
This was one of the first foods I learned to prepare at a very tender age, but over the years my tactics improved.

Despite its rich and vibrant taste, Jollof rice is actually pretty easy to make at home, even if you’re not an experienced cook. You’d want to start from here if you are new to Nigerian foods.

To prepare traditional/classic Jollof rice, do the following.

- Pre-boil the rice: drop it into boiling water and boil until the rice is white, but not cooked through – taste a few grains to make sure. Then wash the rice in ice cold water to stop the cooking process.
- Combine the tomato puree or blended tomatoes, peppers, and onions. Heat up some oil in the pan and cook the tomato mixture until most of the liquid has evaporated.
- Add grated ginger and spices to the reduced tomato and pepper mixture. Add stock and boil the mixture for a couple more minutes until it’s thickened.
- Drop in the cooled rice, add more stock to cover the rice, and cook until the rice is tender enough to your taste. Continue adding the stock if the liquid has evaporated but the rice is not done yet.
- Once the rice is nearly cooked, turn off the heat, cover the pan firmly with a lid and wait for the rice to finish cooking in its own steam.
- Serve with chicken. You can deep fry the chicken, grill it, or cook it with the same tomato and pepper puree you used for rice for an even richer taste.
