Coconut Cake Ingredients And Recipe
- 225 grams of unsalted Butter
- 350 grams of white granulated Sugar
- 2 teaspoon of Coconut Extract
- 4 large Eggs at room temperature
- 325 grams of all purpose Flour
- 2 teaspoon of Baking Powder
- 1/2 teaspoon of Baking Soda
- 1/2 teaspoon of Kosher Salt
- 1 cup of Coconut Milk or Butter Milk
- 1 cup of Desiccated Coconut (optional)
Step By Step Coconut Cake Recipe
Preheat your oven to 250°F. Prepare two 9″ cake pan by greasing the pan with some butter and coating the pan with some flour, removing every excess flour and set aside.
Beat butter till it is light, smooth and creamy.
With your electric mixer on a low-medium speed,gradually add in your sugar and beat for about 3 minutes till it is light and fluffy. Always remember to scrap the edge and bottom of the mixing bowl to ensure the mixture is mixed properly.
Add in your vanilla or coconut extract into step 3 and beat mixture till it is well combined.
Into step 4, add in your eggs one at a time. Beating the mixture properly till it is well combined before adding the next one. When you are done with this, set it aside.
Prepare your dry ingredients. Into another mixing bowl pour in your flour, salt, baking powder, baking soda and your dry shredded coconut and then whisk it together till every thing is well combined.
Into step 5, add in your flour in 3 addition and your milk in 2 addition. I.E. divide the dry ingredients in 3 portions and your milk in 2 portion, begin with the flour mixture and end with the flour mixture. Pour in your flour, mix and then add in your milk and mix. Repeat the procedure ending with the flour.
PS: don’t over beat the cake batter to prevent it from becoming hard when the cake is baked.
Pour batter evenly into the two ready prepared pans, smoothen the top and and bake for about 20-25 minutes or till the cake is ready.You know your cake is ready when a toothpick or knife is inserted in the center and it comes out clean.
Ingredients for Frosting Coconut Cake
- 3 large white Eggs (90 grams) at room temperature
- 1 1/2 cup white granulated sugar
- 1 teaspoon of Corn Syrup or Golden Syrup
- 1/4 teaspoon Cream of Tarter
- 1/4 ml of cold water.
Procedure for Frosting Coconut Cake
Into a large sauce pan, pour in some water and allow it to simmer.
Into a medium size heatproof bowl, pour in all ingredients and beat it together using an electric mixer or a balloon whisk till it is well combined.
Place bowl over the saucepan containing the simmering water still on heat, with the hand mixer on a medium-high speed, beat the mixture for about 3 mins over the heat till it is white in color and thick in texture. Add in a tsp of coconut extract and mix till it is well combined.
Note you can use your whisk to mix to achieve this texture too, the only difference is the strength used and the time spent.
Note you can continue beating till you get the right constituency you want… and then after you set aside and allow it cool completely.
Spread the frosting over the cake and coat it with some shredded sweetened or unsweetened dry coconut.
