Hello dear, today I will be sharing with you a very easy recipe on Blue Layered Sponge Cake With Ganache Drizzle.
With a triple-threat ganache drizzle, colourful sponge layers inside and a generous amount of lollies to decorate, this cake will leave you feeling anything but blue!
Follow this simple instructions to make a fluffy Blue Layered Sponge Cake for your family today.
Blue Layered Sponge Cake
- 8 large eggs
- 173grams caster sugar
- 2 teaspoon vanilla extract
- Sky-blue gel food coloring
- Fruit Jam (your choice)

Now that we know the ingredients we need, let’s look at the procedures for baking Blue Layered Sponge Cake
Preheat your oven. Then prepare 2 cake pan by greasing your your pan with a non-stick spray, and placing your parchment paper and set aside.
Into a mixing bowl, pour half of the sugar and add 4 eggs,beat the mixture using an electric mixer till it is thick and creamy.
Into step 2,add 1tsp of vanilla extract and beat till well incorporated.
Into step 3,add in half of the flour and fold properly to combine.
Share your batter evenly into your cakes pans, smoothen the top using a spatula or spoon.
Bake for about 22-25mins till the top of the cake is firm to touch or dip a skewer is dug in the center and it comes out dry.
place on a cooling rack to cool and set aside.
Repeat step 1, and step 2with the remaining ingredients(i.e the last of the eggs and sugar)
Add in the sky blue food coloring into step 8. (for every drop you put,beat the mixture till you arrive to your desired color)
Add in your remaining vanilla extract beat in till well incorporated into the mixture.Sift in the remaining flour into the mixture and beat well. Use a spatula to fold the batter properly till well combined.
Repeat step 5 and step 6.
Preparation of Buttercream
- 250g butter
- 3cups icing sugar
- white icing coloring
Now that we know the ingredients we need, let’s look at the procedures for preparing Buttercream
With the use of an electric mixer beat butter till is fluffy.
With a mixer on a low speed,gradually add in your icing sugar till well combined and finally add in your white food coloring.
Preparation of the Ganache Drizzle
- 180g white chocolate
- 1/3cup thickened cream
- Food coloring gel (sky blue,teal and royal blue)
Now that we know the ingredients we need, let’s look at the step by step procedures for making Ganache Drizzle
chop chocolate into small pieces and melt chocolate using a heatproof bowl over a sauce pan with water on low heat.
Alow melted to cool,then add the cream and mix with a whisk or spatula till well combined.
Divide mixture evenly into 3 small bowl, add the food coloring, sky blue to 1 bowl,teal coloring to another and royal blue to the last bowl.
mix each mixture properly to get an even color.
How to decorate the cake
- Place 1 blue cake on the turntable,top with Buttercream,spread to level.Then spread some fruit jam on top of the Buttercream topping.
- Repeat process,alternating the cake colors, finishing with a layer of cake. spread the remaining butter over top and side of cake using a palette knife. Smoothen top and side using a cake smoother or an icing comb.
- Quickly pour the Ganache on top of the cake.starting from the top edge of the cake to form those drapes. Alternating the colors, all excess can be pour on the top of the cake.
Put other cakes topping on the cake. Allow to set for about an hour and that’s it
