Eggs are nutritious proteins that contain vitamins and minerals. It is said that an egg has a bit of nearly all the nutrients you need.
They are very healthy and have a shelf life of up to five weeks. They have high cholesterol but this does not affect the body because it will not increase the cholesterol in the body.
They are also affordable for the number of nutrients you get in a single egg. It is true that the more eggs you take, the lower the risk of heart disease. Eggs are more important than we think so I have compiled three major and easy egg recipes that you can easily make;
1. Egg moi moi:
This is simply substituting beans with eggs when cooking the famous Nigerian moi moi.
Egg Moi Moi Ingredients
- 4 eggs
- Ugu (pumpkin) leaves. (Optional)
- Fresh pepper
- Tomato
- Sardines
- Salt.

Procedure
- Break the eggs into a bowl, add salt and mix properly.
- Slice onions, fresh peppers, tomatoes and ugu in a bowl.
- Set out your moi-moi bowls (aluminum)
- Put all the sliced ingredients in each of the bowls. Add your egg mix.
- Place your pot on the stove. Allow water to boil.
- Arrange your bowls of egg moi-moi in the pot, cover it up with aluminum foil, then close the pot.
- Steam it reaches your desired texture or for about 10-15 minutes.
- Serve while hot.
Note;
- You can add other different ingredients to your egg moi-moi.
2. Oat meal and egg porridge:
Want more protein? This is an unusual recipe but if you an oats fan, I think it will interest you to know oats and eggs make quite the perfect combo. It is so nutritious and healthy and can be taken for breakfast or dinner.

Ingredients
- Oats
- Egg
- Water
- Salt
Procedure
- Add water and oats in a pot and allow to cook.
- Continue cooking time you get your desired texture.
- When it is thick, add your egg and salt.
- Stir well till the egg is completely cooked.
- Enjoy your oats meal and egg porridge while hot.
Note;
- You can add more ingredients such as carrots or other veges to your taste.

3. Egg white omelette:
Low in calories and fat. It is the perfect recipe for weight loss.

Ingredients
- 3 eggs
- Onion
- Vegetable oil
- Tomato
- Fresh pepper
- Salt
Procedure
- Slice the tomato, onions and pepper into your required shapes.
- Put the sliced tomato, onion and pepper.
- Break eggs to take out the yolk. Add salt to taste.
- Heat your vegetable oil, make sure you add enough to cover the surface of the whole pan.
- When it is hot, pour the egg white into the pan.
- Place your pepper, onion and tomato on top, allow them fry together.
- Serve while hot.
Note
- Use a non-stick pan for a nice layout.
- Ensure you remove the seeds from the tomato and pepper.
